Come Hungry. Leave Curious. Meet the Smoke & Maple Menu.
There’s something special about sitting down at a new restaurant, opening the menu and realizing you have some decisions to make.
Not because there’s too much on the page. Because there are too many things you genuinely want to try.
That’s what we’ve been working toward at Smoke & Maple.
Our kitchen takes inspiration from the familiar, plays with the unexpected and finds interesting ways to bring the two together. There’s smoke. There’s a little sweetness. There’s heat when it makes sense. And there’s a healthy respect for the ingredients that make good food worth talking about.
Now that we’re officially open in Palm Beach Gardens, Florida, we’d like to introduce you to what’s cooking.
A Little Familiar. A Little Unexpected.
Every great meal has to start somewhere, and our small plates give you plenty of reasons to order a few things for the table.
Take our Belly Bites. Heritage pork belly gets a honey maple glaze and a hit of acidity from pickled green tomatoes. Rich, sweet, sharp. Everything has a reason for being there.
Our Mahi Crudo takes a different approach, pairing fresh fish with compressed mango, serrano chili, lime oil and aji aioli. It’s bright, layered and just adventurous enough to make you think about ordering another.
Then there’s the Octopus & Grits. A combination that might raise an eyebrow until you see what we’re doing with chorizo vinaigrette, pickled okra and micro cilantro.
And if your idea of starting a meal involves cold water oysters, a proper Caesar or a plate of local clams in smoked beer broth, we’ve got you covered there, too.
The point isn’t to make food complicated.
It’s to make it interesting.
The Main Event
Our dinner menu follows the same philosophy. Recognizable dishes, thoughtful preparation and enough personality to make each one distinctly ours.
The Braised Short Ribs arrive with smashed potatoes, glazed carrots, veal demi-glace and fresh horseradish. It’s rich, satisfying and exactly the sort of dish you want in front of you when you’ve decided dinner deserves your full attention.
Our Handmade Pappardelle brings together lump crab, local shrimp, lemon-garlic butter and gremolata. Fresh seafood, pasta and a sauce that knows when to get out of the way.
For something a little different, there’s the Boar Chop, served with charred Brussels sprouts and miso applesauce. Or our Australian Wagyu Strip with bourbon-soy au poivre, blistered shishitos, potato fondant and maple glaze.
We haven’t forgotten about the classics, either.
The Palm Beach Smash Burger comes stacked with two patties, American cheese, house pickles, onions and secret sauce, with truffle fries on the side.
Because sometimes the best thing on the menu is a really good burger.
And sometimes it’s a $65 steak.
We’re not here to judge your decisions.
About That Bar…
We take our cocktails seriously.
Ours is a bar program built around creativity, technique and the idea that a great drink should taste every bit as interesting as it sounds.
The Smoke & Maple, our namesake cocktail, brings together a bonded Khao Khua infusion, maple demerara, Angostura, chocolate, walnut and smoke. It’s layered, aromatic and a pretty good introduction to how we think about cocktails.
Then there’s Bruce Banner, which combines blanco tequila, toasted sesame, avocado, lime and gochugaru orgeat. It’s an unusual combination on paper, and that’s precisely what makes it worth exploring.
Prefer something brighter? Live. Love. Lychee brings together lychee vodka, basil, elderflower, lemon and lavender. Dragon’s Kiss blends vodka, yuzu, dragon fruit marmalade and Prosecco.
We’ve also put our own spin on a few familiar favorites, including an Espresso Martini made with Cuban espresso, Pedro Ximénez sherry and a vanilla-date reduction.
And for the wine drinkers, we’ve assembled a selection that reaches from approachable everyday pours to bottles from some of the world’s most respected wine regions.
Come thirsty. We’ll take care of the rest.
Happy Hour Deserves Its Own Conversation
Some afternoons call for a proper cocktail and a few things to share.
Our happy hour runs daily from 3 PM to 6 PM at the bar and lounge, with specials on cocktails, beer, wine and house mixed drinks.
There’s also a dedicated food menu featuring dishes like our hickory-smoked Smoke & Maple Wings with maple chili glaze, Korean Gator Bites, Fried Green Tomatoes with pimento cheese and hot honey, and Clam Frites served with a citrus maple broth and hand-cut fries.
Grab a seat. Order a round. See where the afternoon goes.
We can think of worse ways to spend a few hours.
Save Room. Trust Us.
A good dessert menu should give you one last reason to stay at the table.
Ours includes Dark Chocolate Pot de Crème with sea salt and smoked cream, Sour Orange Pie finished with torched maple meringue, and Carrot Cake served with local candied ginger ice cream and pistachio brittle.
There’s espresso, too, if the evening needs a little extra fuel.
Or an after-dinner drink.
Or both.
Again, no judgment.
The Menu Is Only Half the Story
We spent a long time thinking about what Smoke & Maple should be.
The food needed to be distinctive without being precious. The cocktails needed to be creative without losing sight of the person drinking them. And the whole experience needed to feel comfortable, whether you’re stopping in for a quick bite or settling in for an evening.
But here’s what matters most.
A menu is a collection of ideas until somebody sits down and orders from it.
Now we finally get to share ours with you.
Browse our full food and drink menus, find something that catches your attention and come see what we’ve been working on.
Bring your appetite. Bring your curiosity. Bring someone who doesn’t mind sharing a few plates.
